TYPOLOGY: Partially fermented Red wine
GRAPE VARIETIES: Croatina, Barbera, Uva Raraand Vespolina
VINIFICATION: Manual harvesting of the grapes,fermentation at controlled temperature until thewanted alcohol level is reached. It is then blockedto keep the residual sugar high in order to obtain asweet wine that can re-ferment in autoclaves beforebottling.
ORGANOLEPTIC CHARACTERISTICS: Ruby red wine with violet reflections and fine foam. Fruity and intense with hints of blackberry and cherry, sweet and quite persistent in the mouth.
ALCOHOLIC STRENGTH: 7% vol.
PAIRINGS: Ideal with desserts, especially red fruit cakes, but also with dry pastries.
SERVING TEMPERATURE: 10°C
STORAGE: in a cool and dry place.
